    Grilled Bourbon Peach Chicken Thighs

    I love fresh peaches!! Unfortunately, we are just about done with fresh peaches for the season. So, to use up some of that sunkissed fruit, try this recipe. It only takes about 30 minutes and you've got an impressive dinner ready. Here's what you'll need for 6 servings:

    Ingredients:

    • 6 chicken thighs boneless, skin on or off
    • 3 peaches cored, quartered

    Bourbon Peach BBQ Sauce

    • 1 peach skin off, cored, diced
    • 1 teaspoon sugar
    • 1/2 cup honey barbeque sauce*
    • 3 tablespoon bourbon

    Spice Rub

    • 1 tsp each onion powder, garlic powder, paprika, chili powder
    • 1/4 teaspoon cayenne pepper
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper


    Mix the ingredients for the spice rub and coat the chicken evenly. Cover and set in fridge to marinade while you prepare the next part.

    In a saucepan, combine one diced peach and sugar, bringing the mixture to a boil. Reduce to a simmer and cook for 5 minutes. Stir in the barbecue sauce and bourbon, continuing to simmer for another 5 minutes. Use an immersion blender or regular blender to puree the sauce, then set it aside.

    Preheat the grill to medium-high heat. Grill the chicken for 3-5 minutes per side. Brush the chicken with the bourbon peach BBQ sauce and cook for an additional minute on each side. Repeat the process with another coating of the sauce. The chicken is fully cooked when it reaches an internal temperature of 165°F.

    While the chicken rests, brush the remaining peaches with the bourbon peach BBQ sauce and grill them for 1-2 minutes on each side. Serve the chicken and grilled peaches immediately, with extra sauce on the side.


    *Notes:
    I like to use honey bbq sauce for this, but you're welcome to use whatever your favorite is.

    You can marinade the chicken, covered and in the fridge, for up to three days.
