Corn Salsa Recipe: Easy and Delicious!

I love making this corn salsa using fresh corn and other vegetables from the garden. This is a simple recipe to make that my family enjoys on taco nights. You will need the following ingredients:

Recipe:

1 1/2 cups of corn or 2 ears of corn cut off the cob

1/2 cup of onion, finely minced

1 tablespoon finely chopped jalepeno

2 tablespoons of fresh cilantro

1 lime, juiced and grated for the zest

pinch of chili powder

pinch of smoked paprika

pinch of cumin

salt and pepper to taste

optional: cojita cheese, diced avocado, black beans, hot sauce, diced tomatoes

Mix the corn, onions, jalapeno peppers, cilantro, and the lime juice and zest together in a medium bowl and then add the chili powder, paprika, cumin and salt and pepper and let rest for at least 25 minutes before serving. Just give this a quick taste test to make sure that the spices are to your liking. Enjoy!

Note: You can use frozen corn or canned corn if you do not have fresh and if you prefer your corn cooked just place it on the grill for a few minutes or in a skillet with a little butter or oil.

You can adjust the heat by adding more or less of the jalapeno peppers. If you don't like spice at all just use bell peppers instead.

I enjoy serving this on nachoes, tacos or with chips to use as a dip. It is very verstile as you can adjust the ingredients to your liking.
