    Ingredients:

    • 5 large russet potatoes, peeled and cubed
    • 2 teaspoons of salt, divided
    • 3 tablespoons of unsalted butter
    • 3 cups of whole milk
    • 1/2 teaspoon ground black pepper
    • 1 onion, finely chopped
    • 1 (8 oz) package of cream cheese, softened
    • 1 (2.8 oz) can of crispy fried onions

    Directions:

    1. Bring a large pot of salted water (1 teaspoon salt) to a boil. Add the cubed potatoes and cook for about 12 minutes, until soft enough to pierce with a fork. Preheat your oven to 325°F.
    2. Drain the potatoes and mash them with butter until smooth. Slowly stir in the milk, the remaining salt, pepper, chopped onion, and softened cream cheese. Keep mixing until everything is well combined and creamy.
    3. Spoon the mashed potatoes into a greased 9x13-inch baking dish. Evenly spread the crispy fried onions on top.
    4. Bake for 30-40 minutes, or until the onions turn a nice golden brown.

    Substitutions:

    • Potatoes: Yukon Golds work well if you prefer a creamier texture.
    • Milk: Swap in half-and-half or heavy cream for a richer flavor.
    • Butter: Try using a plant-based butter for a dairy-free option.
    • Cream Cheese: Neufchâtel or even sour cream can be used for a slightly tangier taste.

    Storage:

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through. If freezing, transfer to a freezer-safe dish and keep for up to 1 month. Reheat straight from the freezer in the oven at 350°F until thoroughly heated.

Enjoy this creamy, comforting dish at any gathering!
