    Food Truck Opening Pizza Restaurant Inside of Local Coffee Roaster

    It might not be possible to have too many pizza restaurants. After all, when you want a slice of ‘za, do you really want to drive across town? So when one pizza restaurant moves out and leaves a vacant space, it can be frustrating for locals, as they no longer are able to easily stop by and grab a pizza with their favorite toppings. Here in Tucson, when one pizza restaurant departs, it leaves behind the possibility of another to move into it’s place. With a wood-fired oven sitting around, waiting for a new tenant, Tucson residents will once again be able to order a pizza when stopping by the Cartel Roasting Company. 

    A few months ago, I wrote about the moving of Penelope Pizza. The shop, which shared a space inside of the Cartel Roasting Company, decided it wanted a bit more elbow room and its own address, so it left. It left a brief hole inside of the coffee roaster, as there was a wood-fired pizza oven suddenly sitting around, gathering dust. That vacant space though has now been scooped up by Lumbre Pizza a La Leña.

    The space proved to be the opportunity Lumbre Pizza had been looking for. The pizza truck, which has been serving up personal, artisan pizzas on the fly with a portable pizza oven, decided to expand its own presence and take over the available space. It made financial sense, as it had the right setup, and because it isn’t a stand-alone business the financial requirements aren’t as steep. For a small business restaurant owner looking to take the next step, doing exactly this was the logical choice. 

    It also means locals and regulars no longer have to go without pizza in the area. Located at 210 East Broadway Blvd (Suite 3), the restaurant will stil be inside of Cartel Roasting Company, which is perfect for anyone wanting both a pizza and a cup of coffee. After a long day of work, sometimes both of those sound like a good idea. 

    The exact launch date hasn’t yet been announced. There will need to be a bit of coordination between the two businesses to ensure an optimal spotlight can be placed on Lumbre Pizza. However, the announcement for Lumbre Pizza moving into the space was made on Instsagram on Friday, September 20, so additional information should be made available in the coming days.
