    This straightforward roasted pork loin goes great with any simple sides like rice, roasted carrots, or a salad. You can also use the pan drippings to make a quick gravy by adding a bit of flour or cornstarch.

    Simple Roasted Pork Loin

    Ingredients:

    • 3–4 lb pork loin, tied with kitchen twine
    • 3 cloves garlic, minced (or 1 tsp garlic powder)
    • 2 tbsp olive oil
    • 1 tbsp butter, melted
    • 1 tsp dried thyme (or Italian seasoning, if on hand)
    • 1 tsp salt
    • ½ tsp black pepper
    • ½ tsp paprika (optional)
    • ½ cup chicken broth or water (for basting)

    Instructions:

    1. Preheat the Oven:
      Preheat your oven to 375°F (190°C). Set a rack in the middle of the oven.
    2. Prepare the Pork Loin:
      Pat the pork loin dry with paper towels. If it isn't already tied, use kitchen twine to tie it at 2-inch intervals along its length. This helps the roast cook evenly and retain its shape.
    3. Make the Seasoning Mix:
      In a small bowl, combine the minced garlic (or garlic powder), olive oil, melted butter, dried thyme, salt, pepper, and paprika (if using). Mix well to create a simple paste.
    4. Season the Pork Loin:
      Rub the seasoning mix all over the pork loin, ensuring it’s well coated. Let the pork sit for 10–15 minutes to absorb the flavors.
    5. Roast the Pork Loin:
      Place the pork loin in a roasting pan or on a baking sheet with a rack. Pour the chicken broth or water into the bottom of the pan to help keep the pork moist while roasting. Roast for 45–60 minutes, or until the internal temperature reaches 145°F (63°C). Tip: You can baste the pork loin with the pan juices halfway through roasting for extra flavor and moisture.
    6. Rest the Pork:
      Remove the pork loin from the oven and loosely cover it with foil. Allow it to rest for 10–15 minutes before slicing to let the juices settle.
    7. Slice and Serve:
      Remove the kitchen twine and slice the pork into thick pieces. Serve with a simple side like roasted potatoes or a fresh green vegetable.
