    Ingredients:

    • 3 tablespoons extra virgin olive oil
    • 18 oz fresh pizza dough, room temperature
    • 2 tablespoons all-purpose flour (for dusting)
    • 5 tablespoons unsalted butter, melted (divided)
    • 2-3 cloves garlic, finely minced
    • 1/2 teaspoon dried thyme
    • 1/2 teaspoon dried parsley flakes
    • 1/2 teaspoon Italian herb mix
    • 3/4 teaspoon dried oregano
    • 1/2 teaspoon kosher salt
    • 1/4 teaspoon ground mustard
    • 1/4 teaspoon black pepper
    • Pinch of cayenne pepper (optional, for a bit of heat)
    • 1 cup shredded sharp cheddar cheese (divided)
    • 1 cup shredded smoked gouda cheese (divided)
    • 1 large Vidalia onion (or two smaller ones), thinly sliced into rings

    Instructions:

    1. Preheat the Oven: Set your oven to 500°F and lightly oil a 13"x18" baking sheet with olive oil.
    2. Prepare the Dough: Dust your work surface with flour and roll out the dough to approximately 12"x17". If the dough resists and shrinks back, let it rest for 10 minutes, then try again. Transfer the dough to the prepared pan and use your fingers to stretch it into the edges.
    3. Create the Garlic Herb Butter: In a small bowl, combine 3 tablespoons of melted butter with garlic, thyme, parsley, Italian herbs, and oregano. Spread this fragrant mixture evenly over the dough.
    4. Layer with Cheese and Onions: Sprinkle half of the sharp cheddar and smoked gouda over the dough. Arrange the onion rings on top in an even layer, then add the remaining cheese.
    5. Drizzle the Final Touches: Stir together the remaining butter with mustard, salt, pepper, and cayenne (if using), and drizzle this over the top.
    6. Bake: Place the flatbread in the oven and bake for 13-15 minutes, or until the crust is golden and the cheese is bubbly. Slice and serve hot.

    Substitutions:

    • Cheese: Swap sharp cheddar with Monterey Jack for a milder flavor, or use pepper jack for an extra kick. Replace smoked gouda with regular gouda or even mozzarella for a creamier texture.
    • Onions: Vidalia onions bring a sweetness to this dish, but red onions or shallots also work if you prefer a different taste profile.
    • Herbs: Fresh herbs like thyme and parsley can replace dried, enhancing the flavors even more.

    Storage:

Leftovers? No problem! Wrap slices in foil and store in an airtight container in the refrigerator for up to 3 days. To reheat, pop a slice in the oven at 350°F for 5-7 minutes to bring back that crispiness. You can also freeze it for up to a month—just thaw overnight in the fridge before reheating.

This Southern Onion Flatbread is perfect for a family meal, a weekend treat, or even a casual get-together. Each bite is packed with savory, cheesy goodness, with a hint of spice that’ll keep you coming back for more!
