A Sweet Southern Twist on Cheesecake Lasagna

While lasagna may be Italian, the concept of layering rich, sweet flavors is right at home here in Georgia, where fresh, local produce like strawberries takes center stage. This no-bake dessert uses those delicious berries in a creamy cheesecake filling, all stacked atop a buttery graham cracker crust. It’s the kind of dessert that will make you feel like you’re sitting on a porch swing, enjoying a warm Georgia evening.

    Recipe: No-Bake Strawberry Cheesecake Lasagna

    Ingredients:

    • 1 package (8 oz) cream cheese, softened
    • 1/2 cup granulated sugar
    • 1 cup heavy cream
    • 1 cup strawberry yogurt (or peach yogurt for a Georgia twist!)
    • 2 cups fresh Georgia-grown strawberries, sliced
    • 1 cup graham cracker crumbs
    • 1/4 cup melted butter
    • 1/4 cup powdered sugar
    • 1 tsp vanilla extract

    Directions:

    1. Make the Graham Cracker Crust:
In a medium bowl, stir together the graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of a 9x9-inch dish to create a crunchy, buttery base.
    2. Creamy Cheese Layer:
In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth. Add in the strawberry yogurt (or peach yogurt for a local twist) and mix until well combined.
    3. Whip the Cream:
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture to keep it light and airy.
    4. Assemble the Layers:
Spread half of the cream cheese mixture over the graham cracker crust, creating a smooth layer. Top with a layer of fresh, locally-grown Georgia strawberries.
    5. Final Layer of Creaminess:
Add the remaining cream cheese mixture on top of the strawberries, smoothing it out with a spatula for a clean finish.
    6. Chill to Perfection:
Place the cheesecake lasagna in the fridge and let it chill for at least 4 hours, or until the dessert is set. Garnish with extra strawberries just before serving for that extra burst of color and flavor.

    Georgia Cooking Tips:

    • Yogurt Flavor Twist: While strawberry yogurt adds a classic flavor, using Georgia peach yogurt will give this dessert a local twist that makes it even more special.
    • Local Garnish: For an extra touch of Georgia pride, garnish with pecans for a little Southern crunch.
    • Make It Ahead: This dessert is perfect for making the night before a Sunday BBQ or family gathering. Just let it chill overnight and serve chilled for the best results.

Whether you’re sharing it with family at a potluck or simply enjoying a slice on your back porch, this No-Bake Strawberry Cheesecake Lasagna brings the sweetness of Georgia’s fresh strawberries straight to your kitchen.
