    Lemony Broccoli with Almonds Recipe is Bursting with Fresh Flavor

    Side dishes are the unsung heroes of dinner. They complement the main course and add new flavors and textures. I love experimenting with different sides, and I'm always on the hunt for dishes that are healthy, yet also hearty and packed with flavor. That was the inspiration behind this lemony broccoli with almonds recipe. Broccoli is super nutritious, but eaten on it's own it can be a little ... bland. But not our recipe! We punch up the veggie with garlic and red pepper, and then toss it with lemon juice and toasted almonds before serving. The result: Pure yum!

    This recipe is quick and simple to make — just 10 minutes of prep — and the layers of flavor it delivers are so good! Enjoy it with chicken, beef or fish. Really, this hearty side dish goes great with just about any entree. And the gorgeous green color will liven up your dinner plate. Give it a try and let us know what you think.

    Ingredients

    • 1/3 c. sliced almonds
    • 1 lemon
    • 2 tbsp. olive oil
    • 1 clove garlic, minced
    • 1/8 tsp. crushed red pepper flakes
    • 6 c. broccoli florets, about 1 lb.
    • 1/4 tsp. salt

    Instructions

    Heat large dry nonstick skillet over medium heat. Add almonds; cook, stirring, until golden, 4–5 min. Remove from skillet; reserve. Grate 1 tsp. zest and squeeze 1 Tbs. juice from lemon; reserve.

    In same skillet, heat 1 Tbsp. oil over medium heat. Add garlic and pepper; cook, stirring, 30 sec. Add broccoli, salt, and 1/4 cup water. Cover; cook until tender, 5–7 min. Remove from heat; drain. Stir in remaining oil, then reserved zest and juice. Sprinkle with almonds.
