    What would fall be without apples? The humble fruit practically symbolizes the season, lending itself to many traditions from religious holidays to shared activities. One of my favorite things to do every fall is go apple picking with friends. Once we have our bag of apples, I love to bake them into a perfect dessert. But this year, I’m switching up my usual menu for something different: invisible apple cake. This trending recipe has been all over the internet, and after making it, it’s now one of my favorite ways to enjoy apples. Thinly sliced apples, a custardy batter, all baked into a delicate loaf. And the best part? It’s easier to make than it looks. So, if you’re looking for a new twist on apple desserts, this one is definitely worth it. Here’s how to make it.

    What is invisible apple cake?

    They say that this cake is so good, it almost vanishes from the plate. Now, that could be true if you eat it quickly (which you will). But this sophisticated French dessert, known as “gâteau invisible aux pommes,” is named for the way the thin apple slices seem to disappear into the batter during baking. When you cut a slice, you’ll see what looks like infinite layers of apple. The cake has a delicate, almost pudding-like texture, thanks to the high apple-to-batter ratio. Think of it like a hybrid between a custard and a traditional cake. However, it’s not overly sweet, which means you can top it with a generous drizzle of caramel sauce and a scoop of vanilla ice cream. Check out this TikTok video to see the results:

    Invisible Apple Cake ✨🍎 (Gâteau Invisible Aux Pommes) Recipe below 👇 This beautiful French dessert is made by layering a TON of thinly sliced apples in a custard-like batter. The apples almost disappear into the cake, hence the name! It’s somewhat similar to clafoutis, but with a much higher ratio of fruit to batter. This cake is also not too sweet, and it’s made almost entirely with fresh apples! You can serve it with anything from powdered sugar, to whipped cream, to ice cream and/or caramel sauce. We used our apple cider syrup for topping (you can find the recipe a few posts back). INVISIBLE APPLE CAKE 1 cup all purpose flour 1 tsp baking powder 1/2 tsp cinnamon 1/4 tsp nutmeg 1/4 tsp ginger Pinch of cloves 1/4 tsp salt 2 tbsp melted butter (unsalted) 1/2 cup whole milk (room temp) 1 tsp vanilla extract (or vanilla bean paste) 3 large eggs 2/3 cup granulated sugar 2 lb apples, peeled and sliced 1/8-inch thick Preheat oven to 375˚F. Grease and line a loaf pan with parchment paper. Using a knife or a mandoline, slice apples into 1/8” slices. In a bowl, whisk together the flour, baking powder and spices. In a separate small bowl, whisk together melted butter, milk and vanilla. In a separate large bowl, beat eggs and sugar for 90 seconds on medium speed, until pale. Add half of the flour mixture and mix on low speed until combined, then add the butter/milk mixture, then the remaining flour, mixing just until the batter comes together. Add the apples to the bowl and gently toss until they are evenly coated in the batter. Layer the apples into the prepared loaf pan. Pour any remaining batter in the pan. Bake for 70-75 minutes, until golden brown around the edges and a toothpick comes out clean. Let cool for at least one hour before slicing and serving. #apples #cake

    If French desserts sound a bit intimidating to you, don’t worry. I have some tricks that make the process seamless.

    1. Choose the right apples

    For the best texture and flavor, use any sweet, tart varieties like Fuji or HoneyCrisp apples. These varieties hold up well during baking and add sweetness to the soft, custardy batter. I don’t reccommend more sour-leaning apples, like Granny Smith or Pink Lady apples.

    2. Slice thinly and evenly

    The secret to this cake’s unique “invisible” texture is how you slice the apples. Aim for paper-thin slices, ideally using a mandoline. Even slices ensure that the apples cook evenly and meld seamlessly into the batter. If you don’t own a mandoline, here’s an easy video tutorial to follow:

    3. Give it time

    Patience is key with this cake. Mine took about an hour to bake until the top turned golden. But since every oven works differently, I suggest watching the loaf in the last 10 minutes of cook time. Once it’s out of the oven, let it cool completely before slicing. This allows the flavors to meld and the cake to firm up, making it easier to cut and serve.

    This traditional French recipe from Hungry Happens is easy to make in about an hour with a loaf pan. Top your cake with a dusting of powdered sugar or some toasted almond slices for a bakery style finish.

    Ingredients:

    • 3 eggs, lightly beaten
    • ⅔ cup milk, slightly warmed
    • 3 Tbs. butter, melted
    • 1 tsp. vanilla extract
    • ½ cup flour
    • ½ cup powdered sugar
    • ½ tsp. cinnamon
    • 1 tsp. baking powder
    • ¼ tsp. salt
    • 4 apples, about 2 lbs.

    Directions:

    • Total Time: 1 hour 10 minutes
    • Yield: 8 servings
    1. Preheat the oven to 350°F. Line a 9×5” loaf pan with parchment paper.
    2. In a large bowl, quickly whisk together the eggs, milk, butter and vanilla. Then, add in the flour, powdered sugar, cinnamon, baking powder and salt and mix until smooth. The batter should look thin or slightly watery.
    3. Peel, core and slice your apples very thinly with a mandoline (or by hand), then add them to the bowl and mix to coat. Transfer the apples only to the pan, a little at a time, gently flattening out any pieces sticking up. Pour on the remaining batter to the top of the loaf pan evenly.
    4. Transfer to the oven and bake for 50 to 60 minutes, or until the top is golden brown. Allow the cake to set in the pan for 10 minutes, then transfer to a wire rack to cool for another 15 minutes before serving.

    Note: If you want more fall flavor, this recipe recommends adding a brown sugar and cinnamon mixture on top of your cake before baking. For this, whisk together two tablespoons of brown sugar and ½ teaspoon of cinnamon.

    Storage and reheating

    You can store any leftover invisible apple cake in the fridge for up to four days. To keep it at its best, wrap the loaf tightly in plastic wrap or place it in an airtight container. If you want to eat it warm, simply pop a slice in the microwave for 10 to 15 seconds. However, I found it tastes just as great chilled.
