    Ingredients:

    • 1 cup (2 sticks) salted butter, separated
    • 1/2 cup white sugar, divided
    • 2 cups packed dark brown sugar, divided
    • 2 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon kosher salt
    • 1 large egg
    • 1 egg yolk
    • 1 tablespoon pure vanilla extract

    Directions:

    1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
    2. In a saucepan, melt 3/4 cup of the butter over medium heat, stirring until the butter turns golden brown. Once browned, remove from heat and mix in the remaining butter until fully melted.
    3. Add 1 1/2 cups of dark brown sugar to the melted butter and stir until smooth. Mix in the egg, egg yolk, salt, and vanilla until combined.
    4. In a separate bowl, whisk together the remaining 1/2 cup of brown sugar, 1/4 cup of white sugar, flour, and baking soda.
    5. Gradually add the butter mixture into the dry ingredients and stir until a soft dough forms.
    6. Shape the dough into balls, then roll them in the remaining 1/4 cup of white sugar. Place them evenly spaced on the prepared baking sheet.
    7. Bake for 12-14 minutes, until the cookies are just set but still soft. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy them warm for the ultimate treat!

    Substitutions:

    • If you're out of dark brown sugar, light brown sugar works just fine, though the cookies may have a slightly milder flavor.
    • Swap salted butter for unsalted if that's what you have on hand, just remember to add an extra pinch of salt for balance.
    • Feel free to add a sprinkle of cinnamon or nutmeg to the dough for a warm, spiced twist.

    Storage:

Store these cookies in an airtight container at room temperature for up to 5 days. To keep them extra soft, toss a slice of bread in with the cookies—trust me, it works! If you want to freeze them, place the cooled cookies in a freezer-safe bag for up to 3 months. Just let them thaw at room temperature before serving.
