    While most people are reaching for pumpkin , apple and caramel flavors this fall, you can be different and reach for lemons , instead. Lemons are packed with many health benefits , including boosting the immune system, which is perfect for cold and flu season. They also contain compounds that promote healthy skin and reduce inflammation, and they've been shown to support weight loss due to their metabolism-boosting properties, which are all perks on top of giving you a great flavor.

    Many people don't think of using lemons for fall desserts , but content creator @that40yearguy just shared a lemon dessert that we have to try right away. The dessert, a lemon posset, is creamy and fresh and light and is a nice break from the heavy fall spices.

    What is Lemon Posset and How Do You Make It?

    Lemon posset is a classic British dessert. In the Middle Ages, posset was a hot milk-based drink that was used to treat colds, but over the centuries posset came to be known as a creamy, lemony pudding.

    To make his version of lemon posset, @that40yearguy starts with five lemons and cuts them in half lengthwise. Then, he says to core the center out and place the shells to the side. Next, add 2 cups heavy creamy and 2/3 cup sugar to a small pot. Using a citrus squeezer, juice one lemon into the pot with the cream and sugar. Add the zest of one lemon and, whisk to combine. Bring the mixture to a simmer and cook the mixture for 10 minutes.

    While the posset is simmering, place your lemon shells on a baking sheet. Once the mixture is ready, pour the posset into the lemon shells. Place the baking sheet in the refrigerator for three or four hours or until the pudding is set.

    Once the pudding is set, you can dig in, or you can gild the lily by sprinkling each serving with sugar and caramelizing the sugar with a culinary torch, as you would creme brulee.

    The magic of this recipe is that the acid in the lemon juice causes the protein in the heavy cream to coagulate, which helps the dessert set up to a soft pudding consistency. If you don't want to deal with the lemon shells or the bruleeing, you can make lemon posset in the saucepan with the cream, lemon juice and zest, and sugar and then pour it into small cups or bowls. Once it's set, serve it with cookies and/or whipped cream.

    It's a great dessert to have in your back pocket if you need something easy for a dinner party. And honestly, as far as we're concerned, lemon desserts never go out of season.
