    • 2 cups all-purpose flour
    • ¾ teaspoon baking soda
    • ½ teaspoon salt
    • (Optional) ½ teaspoon ground cinnamon
    • 4 ripe bananas, mashed
    • ½ cup cottage cheese
    • 1 cup sugar
    • 2 eggs
    • ⅓ cup vegetable oil
    • 1 teaspoon vanilla extract

    Instructions:

    1. Preheat your oven to 350°F and lightly grease a standard loaf pan.
    2. In a medium-sized bowl, whisk together the flour, baking soda, salt, and optional cinnamon. Set this dry mix aside.
    3. In a larger bowl, mash the bananas until smooth, then stir in the cottage cheese, sugar, eggs, oil, and vanilla extract until fully combined.
    4. Gradually fold the dry ingredients into the banana mixture, stirring just enough to bring everything together. Be careful not to overmix.
    5. Pour the batter into the greased loaf pan and bake for 55-60 minutes. Check for doneness by inserting a toothpick—if it comes out clean, it’s ready!
    6. Let the loaf cool for a bit before slicing into thick, delicious pieces.

    Substitutions:

    • Flour: Swap in whole wheat flour for a heartier loaf.
    • Oil: Replace the vegetable oil with melted butter or coconut oil for a different flavor profile.
    • Cottage Cheese: If you don’t have cottage cheese on hand, Greek yogurt works just as well!

    Storage:
