    Ham & Asparagus Quiche: A Versatile Leftover Recipe

    This is a quiche with deli ham (or any leftover ham from a holiday dinner) with the addition of asparagus. This recipe is perfect for any leftovers from a previous meal! There are so many possibilities to mix and match the ingredients so just using this basic recipe you can create a new meal every time you make this meal!

    Ham and Asparagus Pie

    • 1 9-inch unbaked deep dish pie shell (homemade or store-bought)
    • 1 cup deli ham minced
    • 2 cups baby asparagus the tops chopped (no woody ends or stalks)
    • 1/2 cup chopped bell peppers chopped (for holiday use red and green)
    • 1 cup sliced mushroom chopped
    • 2 cups Swiss or sharp cheddar shredded cheese
    • 2 tablespoons salted butter
    • 6 large eggs at room temperature
    • 2 cups heavy cream, whole milk, or half-and-half
    • 1 teaspoon granulated garlic powder
    • salt and pepper to taste
    • 1 tablespoon parsley
    • Note: any vegetables can be substituted or meat for this recipes

    Directions:

    1. Bake a store-bought pie crust at 350 degrees for 6 to 7 minutes. Cool.
    2. Leave oven on.
    3. If using a homemade crust lightly oil spray the pie plate.
    4. In a small skillet, add 2 tablespoons butter with the chopped asparagus, peppers, garlic powder, and mushrooms and season with a little salt for around 4 minutes stirring constantly.
    5. Beat the eggs in a bowl with the cream and season with salt pepper and parsley.
    6. Stir in around 1 cup of the cheese you're using and mix well then add the ham. Sprinkle the crust with cheese and save the remaining for the top.
    7. Pour egg mixture into the crust, and top with cheese.
    8. Bake at 350 degrees for 1 hour or until the center looks dry on top and not wet in the middle.
    9. Cool completely before serving
