    Journeyman Distillery Unveils New Complex in Valparaiso, Indiana

    Valparaiso, Ind.Journeyman Distillery, renowned for its award-winning spirits, has officially opened its new expansive complex in Valparaiso, Indiana. Founded in 2009 by Bill Welter, the distillery has made a name for itself with its premium whiskey, gin, and vodka, initially based in Three Oaks, Michigan. This latest venture marks an exciting chapter for the brand, offering not just high-quality liquor but also a full restaurant and brewery.

    Located in a beautifully restored industrial site, the Valparaiso campus features multiple event spaces, a retail area, and a new brewery named Sea of Monsters, led by brewer Greg Winget. Welter’s decision to expand to Indiana stems from his family's roots in Valparaiso and the evolving legal landscape surrounding craft distilling, which has become increasingly popular since Journeyman's inception.

    “It’s a direct part of their ideals in creating a long-term family business,” Welter remarked, emphasizing his commitment to bringing the distillery back to its Indiana origins. The transformation of the vacant industrial site into a vibrant destination is a testament to Welter’s vision, as he aims to create a space that combines community, quality craftsmanship, and sustainability.

    The brewery, which opened recently, was a long-standing ambition for Welter. After facing infrastructure limitations in Michigan, he seized the opportunity in Valparaiso to integrate a brewery into the complex from the ground up. With its quaint pub area and diverse beer lineup, Sea of Monsters complements the distillery’s offerings and caters to local demand for craft beer.

    Despite the Valpo location being operational since last fall, it just began distilling spirits this week, with a focus on producing rye whiskey—an essential part of the Journeyman lineup. Indiana’s new designation for Indiana Rye requires that the spirit be distilled and aged locally for at least two years, adding an exciting layer to Journeyman's offerings.

    The response from the Valparaiso community has been overwhelmingly positive, with locals frequently visiting the distillery and restaurant. Welter is optimistic about attracting visitors from nearby Chicago, positioning the new complex as a must-visit destination, particularly as fall approaches.

    “We hope that people in Chicago will learn that there’s a really cool town and a really cool distillery just slightly southeast of them,” he said, inviting both locals and tourists to experience the charm of Valparaiso.

    As Journeyman Distillery continues to grow, it remains committed to its roots, family values, and the craft of distilling, ensuring that each spirit produced is a reflection of its rich heritage.
