    Apple Granola Muffins

    As the name implies, these are meant to keep the morning as the part of the day to charge up, set a good mindset, and head off into the daily unknown as prepared as possible. Now, while I’ve been known to enjoy a yogurt and fruit as a means of ‘healthful’ eating in the morning, such cold fare really doesn’t cut it once the temperatures drop and fall sets in. On the contrary, for me at least, that’s basically an exercise in masochism.

    To avoid such unpleasantness is precisely where today’s recipe comes in, as mentioned before, “It Is a Good Morning Muffins” or Apple Granola Muffins.

    Ingredients

    • 1 1/4 cup rolled oats
    • 2/3 cup whole milk
    • 2 eggs
    • 3/4 cup sugar
    • 1/4 cup Canola oil
    • 1 cup Bob’s Redmill Flour
    • 2 1/2 tsps. baking powder
    • 1/2 tsp. salt
    • 1/2 tsp. cinnamon
    • 1 tbs. vanilla
    • 1 cup chopped apples
    • 3/4 cup chopped walnuts
    • Your favorite brand of honey granola

    Instructions

    1. Preheat oven 375 degrees F.
    2. Combine Bob’s Redmill Quick Cooking Rolled Oats, eggs, sugar, milk, and Canola oil in a bowl and gently mix together.
    3. In a second bowl combine flour, baking powder, salt and cinnamon and stir together. Add the bowl with the flour mixture to the wet ingredients and gently stir together.
    4. Stir in the chopped apples and the chopped nuts.
    5. Top each muffin with the Bob’s Red Mill Gluten Free Honey Oat Granola.
    6. Bake 20 – 25 minutes or until the toothpick test comes out clean.
