    Ingredients:

    • 1 (5 or 6 oz) package of egg noodles
    • 1 can cream of chicken soup
    • 2/3 cup milk
    • 1 1/2 cups shredded American cheese
    • 1/4 cup chopped green bell pepper
    • 1 teaspoon salt
    • 2 cups diced cooked chicken
    • 1 cup sliced celery
    • 1/4 cup diced pimento
    • 1 cup blanched and toasted slivered almonds
    • Breadcrumbs or crushed potato chips for topping

    Instructions:

    1. Preheat your oven to 400°F. Cook the egg noodles in salted boiling water following the package instructions. Once done, drain and set aside.
    2. In a medium saucepan over medium heat, combine the cream of chicken soup, milk, and salt. Stir until warm, then mix in the shredded cheese until it’s fully melted and creamy.
    3. Add the diced chicken, celery, bell pepper, pimento, and 1/2 cup of the almonds to the cheese sauce. Stir until everything is coated in the cheesy goodness.
    4. Transfer the cooked noodles into a 2-quart casserole dish. Pour the sauce mixture over the noodles, making sure to spread it evenly.
    5. Sprinkle the top with breadcrumbs or crushed potato chips for a golden, crunchy finish. Top it off with the remaining toasted almonds.
    6. Bake, uncovered, for 20 minutes, or until the top is golden and bubbly. Serve hot and enjoy!

    Substitutions:

    • Chicken: Swap the chicken for turkey or even rotisserie chicken if you're looking for a shortcut.
    • Cheese: If American cheese isn’t your favorite, cheddar or a blend of cheeses like mozzarella and Monterey Jack work beautifully.
    • Vegetables: Feel free to add more veggies like peas or mushrooms to boost the nutrition factor.
    • Toppings: Instead of breadcrumbs or chips, try topping with crispy fried onions for extra crunch.

    Storage:

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, pop it in the oven at 350°F until heated through, or use the microwave for a quicker option. If you’d like to freeze it, just let the casserole cool completely and transfer to a freezer-safe container for up to 3 months.

This creamy chicken casserole is a true crowd-pleaser, perfect for weeknights or any time you crave comfort on a plate.
