Homemade Twix Cookies For A Halloween Treat

Twix is one of our favorite candy bars, especially the mini ones. Have you ever wondered why the mini ones taste different than the regular sized ones? Weird. Anyway, these are a fantastic Twix cookie knockoff. Here is what you'll need to make about 20 cookies:

    Ingredients:

    • 1 cup salted butter softened
    • 1 cup powdered sugar
    • 2 teaspoon vanilla extract
    • 1 teaspoon baking powder
    • 2 cup all-purpose flour plus extra for dusting when rolling dough

    Caramel Layer

    • 22 ounces Kraft Caramel Bits
    • 2 tablespoon milk
    • 1/2 teaspoon salt

    Chocolate Layer

    • 3 cups milk chocolate chips
    • 2 teaspoon vegetable oil

    Cookie Layer

Line your baking sheets with parchment paper or silicone baking mats.
In a mixing bowl, beat together butter and sugar using an electric mixer. Add the vanilla, baking powder, and flour, and mix until just combined, being careful not to overmix.
Wrap the dough tightly in plastic wrap and refrigerate for about an hour.
When ready to bake, preheat the oven to 350°F.
Lightly flour a clean surface, and roll the dough out to about 1/4-inch thickness. Use a round cookie cutter to cut out the dough, then transfer the rounds to the prepared baking sheets. Bake for 7-10 minutes, ensuring the cookies are set but not overly browned. Avoid overbaking.
Remove from the oven and cool on a wire rack.

    Caramel Layer
Melt caramel bits with milk in a microwave-safe bowl. Heat for one minute, stir carefully, and continue microwaving in 20-second intervals until fully melted. Stir in the salt.
Place a teaspoon of caramel on each cookie, spreading it if needed. Let the caramel set for about 30 minutes, or refrigerate the cookies to speed up the process.

    Chocolate Layer
In another microwave-safe bowl, heat chocolate chips and oil in 30-second intervals, stirring after each. Once smooth, avoid overheating the chocolate to prevent it from seizing.
Spoon a teaspoon of melted chocolate over the caramel on each cookie, spreading it to cover the caramel. Once the chocolate is set, the cookies are ready to enjoy!
