    1. Clean the chitterlings by removing all specks and any pieces of fat with specks on them. Remove the membrane. Rinse in several changes of salted water to ensure thorough cleaning.
    2. Place the cleaned chitterlings in a large pot, and add enough water to cover. Bring to a boil over medium-high heat, then drain, rinse, and return to the pot. Add fresh water, ensuring the chitterlings are fully submerged.
    3. Add the whole onions, potato, celery stalks, chopped bell pepper, apple cider vinegar, garlic, salt, bay leaf, Creole seasoning, and red pepper flakes. Bring the mixture to a boil over medium-high heat, then reduce to medium heat, cover, and simmer for 3 to 4 hours. The chitlins should appear clear to white in color when done.
    4. Using a slotted spoon, remove the chitterlings and transfer them to a cutting board. Cut the chitlins into 1-inch pieces. Discard the onions, potato, celery, and bay leaf. Pour out most of the cooking liquid but leave a small amount for additional moisture.
    5. Return the chitlins to the pot, and cook over medium heat for about 5 minutes, stirring occasionally until they are heated through and ready to serve.
