    Easy Pumpkin Chocolate Chip Cookies

    Pumpkin cookies are one of my very favorite cookies. I literally eat them year-round. (Partially because I convince myself they're healthy, but that's beside the point). These cookies are so tasty! I've tried many recipes for pumpkin chocolate chip cookies, but the ones that seem to turn out the best are the ones with oil instead of butter. Try these and tell me if you agree! This is what you'll need to make about 15 cookies (double it!):


    Ingredients:

    • 2 cups all-purpose flour
    • 2 teaspoons baking powder
    • 1 teaspoon baking soda
    • 2 1/2 teaspoons ground cinnamon
    • 1 1/2 teaspoon pumpkin pie spice
    • 1/2 teaspoon salt
    • 1 cup pumpkin puree
    • 1 cup granulated sugar
    • 1/2 cup vegetable oil
    • 1 large whole egg
    • 2 teaspoons vanilla extract
    • 1 1/2 cups semisweet chocolate chips


    In a large mixing bowl, combine the flour, baking powder, baking soda, cinnamon, pumpkin spice, and salt. In a separate medium bowl, whisk together the pumpkin puree, sugar, vegetable oil, vanilla, and egg until well blended. Add the wet ingredients to the dry ingredients and stir gently until just combined. Fold in the chocolate chips, being careful not to over-mix. Cover the bowl with plastic wrap and refrigerate for 30 minutes.

    Preheat the oven to 350°F and prepare cookie sheets with parchment paper or nonstick spray. Scoop the dough in large spoonfuls, placing the cookies about 2 inches apart on the sheets. Bake for 10-12 minutes, then allow the cookies to sit for 2 minutes before transferring them to a cooling rack. Enjoy!
