Risotto is one of my favorite go-to entrées at our local Trattoria. But I usually shy away from making it at home. All that stirring to achieve the perfect consistency can sometimes be a chore. That's what inspired this Mushroom and Peas Risotto recipe. It's a Twist on an Italian classic that bakes in the oven. Best of all, at only $1.33 per serving, it satisfies the hungriest of appetites.

Our clever trick to ensure this dish turns out just as velvety as the traditional — we combine convenient canned cream of mushroom soup and chicken broth to create the cooking liquid. How easy is that? Then fresh thyme adds a delicious herbal note that pairs perfectly with the mushrooms and peas. And Tangy Parmesan cheese gives it a nutty finish. A bit more broth gets stirred in at the end to ensure the dish turns out deliciously creamy. Give it a try then let us know what you think.
