    Ingredients

    • 1 (3 oz.) package lemon gelatin
    • 1 cup boiling water
    • 3 cups graham cracker crumbs
    • 1/2 cup (1 stick) butter, melted
    • 1 (8 oz.) package cream cheese
    • 1 cup granulated sugar
    • 4 tablespoons lemon juice
    • 1 (12 oz.) can evaporated milk, well-chilled

    Directions

    1. In a medium bowl, dissolve the lemon gelatin in boiling water. Let it sit for 5-10 minutes until it cools and begins to thicken slightly.
    2. While waiting, mix 3/4 of the graham cracker crumbs with the melted butter in another bowl. Press this mixture into the bottom of a 9x13-inch pan to form the crust. Set aside the remaining crumbs for the topping.
    3. In a separate bowl, whip the chilled evaporated milk until it doubles in size and becomes light and airy, about 2-4 minutes.
    4. In another bowl, beat the cream cheese, sugar, and lemon juice until smooth. Once the gelatin has thickened, combine it with the cream cheese mixture, then fold in the fluffy evaporated milk.
    5. Spread the cheesecake filling evenly over the graham cracker crust. Sprinkle the remaining graham cracker crumbs on top for a tasty finishing touch.
    6. Cover and chill in the refrigerator for at least 2 hours, or let it set overnight for best results. Slice and enjoy!

    Substitutions

    • If you’re not a fan of lemon, try swapping out the lemon gelatin and juice with a berry-flavored gelatin and a splash of lime juice for a fruity twist.
    • You can also use low-fat cream cheese and evaporated milk for a lighter version without compromising on flavor.
