    Chipotle-Lime Salmon With Avocado Salsa

    This is another amazing restaurant quality recipe that can hit your table in about 30 minutes or less. This salmon pairs well with brown rice, grilled vegetables, or a side salad. I love it for the balance of sweet and heat. If you like more heat, feel free to turn it up! This is what you'll need for about 4 servings:

    Ingredients:

    • 2 tablespoons oil
    • 1 lime, juice and zest
    • 1 Tbl honey
    • 1 chipotle chili in adobo sauce
    • 2 teaspoons adobo sauce
    • 1/2 teaspoon cumin
    • 1 clove garlic, minced or grated
    • salt and pepper to taste
    • 2 pound salmon fillet
    Optional Avocado Salsa:
    • 2 large avocados, diced
    • 1 lime, juiced
    • 1 jalapeno pepper, finely diced
    • 1 tomato, seeded and finely diced
    • 1/4 cup red onion, finely diced
    • 2 tablespoons cilantro, chopped
    • salt to taste

    In a blender or food processor, combine the olive oil, freshly squeezed lime juice, lime zest, honey, chipotle chilies, adobo sauce, cumin, and garlic. Blend until the mixture becomes smooth and well-combined, forming a rich and spicy marinade. Meanwhile, place the salmon fillets on a baking sheet lined with foil, patting them dry with a paper towel to ensure the seasoning sticks. Generously season the salmon with salt and pepper. Spread the chipotle-lime marinade evenly over each fillet, ensuring they are fully coated.

    Preheat your oven to 400°F, and bake the salmon for 10 to 15 minutes, or until it’s just cooked through. The fish should flake easily with a fork while remaining moist and tender. Remove from heat and serve with avocado salsa and/or rice or a side salad, and enjoy!

    For The Avocado Salsa:

    Combine all ingredients into a medium-sized bowl and gently mix well. Serve with salmon or chips.
