    Ingredients

    For the Cake:
    • 2 3/4 cups all-purpose flour
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 1 3/4 cups granulated sugar
    • 1 cup egg whites (about 7-8 large egg whites)
    • 1 teaspoon vanilla extract
    • 1 cup whole milk

    For the Frosting:
    • 1 cup unsalted butter, softened
    • 4 cups powdered sugar
    • 1 teaspoon vanilla extract
    • 2-4 tablespoons heavy cream or milk

    Directions

To start, preheat your oven to 350°F (175°C) and grease and flour three 9-inch round cake pans. In a medium bowl, whisk together the flour, baking powder, and salt, then set this mixture aside.

In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy, which should take about 3-5 minutes. Gradually add the egg whites and vanilla extract, mixing until well combined. Next, alternately add the dry ingredient mixture and the milk to the butter mixture, beginning and ending with the dry ingredients, mixing until just combined—be careful not to overmix.

Once your batter is ready, divide it evenly among the prepared cake pans and bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

After baking, remove the cakes from the oven and let them cool in the pans for about 10 minutes before transferring them to wire racks to cool completely. While the cakes are cooling, prepare the frosting by beating the softened butter in a large mixing bowl until creamy. Gradually add the powdered sugar, mixing until well combined, then add the vanilla extract and enough heavy cream or milk to achieve your desired consistency.

Once the cakes are completely cooled, place one layer on a serving plate and spread a layer of frosting on top. Repeat this process with the second layer, then place the third layer on top and frost the top and sides of the cake. Finally, slice and enjoy your delicious homemade white cake!
