    Rich and Buttery Butterscotch Cookies: Easy-to-make Cookie Recipe

    This is an awesome holiday cookie recipe to try. Whether you need cookies for your work potluck, your kids school or to enjoy at home, these cookies will be a hit.

    Rich, buttery, sweet butterscotch flavor. They are tender and melt in your mouth.

    Ingredients

    • 1 cup unsalted butter, softened
    • 1 cup packed brown sugar
    • 1/2 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 2 1/2 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 cup butterscotch chips (melted)
    • 1/2 cup chopped nuts (optional, such as pecans or walnuts)

    I like to melt the butterscotch chips into the recipe but, you can throw them in the batter whole and they'll be sprinkled throughout the cookies, like chocolate chip cookies.

    Directions

    To start, preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy. This should take about 2-3 minutes. Next, add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.

    In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined. Be careful not to overmix the dough. Gently fold in the melted butterscotch chips and chopped nuts, if using.

    Using a tablespoon or a cookie scoop, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie to allow for spreading. Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly golden and the centers are set but still soft.

    Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy your delightful butterscotch cookies with a glass of milk or your favorite beverage!
