    Bacon, egg, and cheese potato pancakes

    These savory bacon, egg, and cheese potato pancakes are sure to impress your family and friends with their crispy exterior and flavorful interior. Whether you opt for small individual potato pancakes or a large one sliced like a pizza, these savory treats are guaranteed to be a hit at any gathering.

    Ingredients:

    • 6 to 8 potatoes, grated
    • 4 eggs, whisked
    • 1/2 cup to 1 cup of chopped, cooked bacon
    • 1 small onion, finely diced
    • 1/2 cup of grated cheddar cheese
    • Seasoning salt and freshly ground black pepper
    • 1/4 cup of canola oil

    Instructions:

    To begin, combine the grated potatoes, whisked eggs, chopped bacon, diced onion, grated cheddar cheese, seasoning salt, and black pepper in a large mixing bowl. Mix well to ensure all ingredients are evenly distributed.

    Next, heat the canola oil in a large cast-iron or non-stick skillet over medium heat. Once the oil is hot, carefully spoon the potato mixture into the skillet, shaping them into small patties or one large skillet-sized pancake. Cook for 8 to 12 minutes on each side, or until they are golden brown and crispy. For an extra touch of flavor, sprinkle additional grated cheddar cheese on top of your potato pancakes.

    Once cooked, transfer the potato pancakes to a paper towel-lined plate to drain any excess oil.
