    Ingredients

    Dry ingredients:
    • 2 cups all-purpose flour
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt

    Wet ingredients:
    • 1/2 cup (1 stick) unsalted butter, softened
    • 1/2 cup brown sugar, packed
    • 1/2 cup granulated sugar
    • 1 large egg
    • 1 teaspoon vanilla extract

    Mix-ins:
    • 1 cup white chocolate chunks (or chips)
    • 1 cup dried cranberries

    Directions

    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a medium bowl, whisk together the flour, baking soda, and salt, then set aside.

    In a large bowl, beat the softened butter with brown sugar and granulated sugar until light and fluffy, about 2-3 minutes.

    Add the egg and vanilla extract, mixing until well combined.

    Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined, and then gently fold in the white chocolate chunks and dried cranberries. Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet, spacing the cookies about 2 inches apart.

    Bake for 10-12 minutes, or until the edges are lightly golden and the centers look slightly underbaked. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy!
