    Homemade Gingerbread Man Cookies: Holiday Cookie Recipe

    I love gingerbread. I could honestly eat gingerbreadk cookies or gingerbread loaf all year. The flavor is heart, slightly savory, rich and bold. This cookie recipe is super easy and one you'll have fun making with the kids.

    Pair this with a glass of cold milk.

    Ingredients

    Dry ingredients:
    • 3 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1 tablespoon ground ginger
    • 1 tablespoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1/2 teaspoon salt

    Wet ingredients:
    • 3/4 cup unsalted butter, softened
    • 1/2 cup brown sugar, packed
    • 1/2 cup molasses
    • 1 large egg

    For decorating:
    • Royal icing or icing of your choice
    • Colored sprinkles (optional)
    • Mini chocolate chips or candy eyes (optional)

    Directions

    • Mix dry ingredients: In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, and salt. Set aside.
    • Cream butter and sugars: In a large bowl, beat the softened butter and brown sugar together until creamy. Add the molasses and egg, mixing until well combined.
    • Combine wet and dry ingredients: Gradually add the dry mixture to the wet mixture, stirring until a dough forms. If the dough is too sticky, you can add a little more flour as needed.
    • Chill the dough: Divide the dough in half, wrap each half in plastic wrap, and refrigerate for at least 1 hour (or overnight) to firm up.
    • Preheat the oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
    • Roll and cut out cookies: On a lightly floured surface, roll out one half of the dough to about 1/4 inch thick. Use cookie cutters to cut out gingerbread men shapes and place them on the prepared baking sheets.
    • Bake: Bake for 8-10 minutes, or until the edges are firm but the centers are still soft. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
    • Decorate: Once the cookies are completely cooled, decorate them with royal icing or your preferred icing. Add sprinkles, mini chocolate chips, or candy eyes for extra fun!
