    • 8 oz pkg dried beef, sliced just a sliver thick
    • 4 tbsp butter
    • 1/4 cup all-purpose flour
    • 1 3/4 cup whole milk (more full fat is always best)
    • 1/2 teaspoon (or to taste) freshly ground black pepper
    • 1/4 tsp nutmeg (this is optional =) just a little warmth in there.
    • Chopped fresh parsley (for garnish) – optional
    • Bread, toast, or biscuits for serving

    Instructions:

    For the Beef: Rinse dried beef under cold water to remove a bit of saltiness. Remove from the skewer use paper towels to pat dry, then cut into strips or bite-sized pieces.

    How to Make Any Type of Roux: In a large skillet over medium heat, melt the butter. When bubbly and melted, stir in the flour so that a roux is formed. Whisk the sauce for about 1-2 minutes until smooth & a little golden in color.

    Whisk in the Milk: Slowly whisk milk into flour so that no lumps. Stirring constantly continue to whisk the mixture until it thickens and gently boils.

    Mix the beef slices: Lower the heat, and stir in all your prepared Beef slices. Add the meat and let it simmer for about 5 minutes to allow the flavors to meld well, until heated all the way through. Sprinkle with black pepper and more nutmeg, if desired. Adjust seasoning to taste and serve immediately.

    InstructionsServe: Eat it hot with toast, biscuits, or mashed potatoes! Top with some chopped fresh parsley for color and a hint of freshness.

    1. How to make it healthier: Add a touch of heavy cream, mash half the potatoes very coarsely instead of smooth, and choose butter over lardons or duck fat.
