    Copycat Cheesecake Factory Thai Lettuce Wraps

    Don't let the long ingredient list deter you from making this. You can make this in stages if you'd like and marinade the chicken longer than 30 minutes. We think they are an incredible Cheesecake Factory knockoff. This is what you'll need to make about 4 servings:

    Chicken

    • 1 1/2 lb chicken tenderloins
    • 1, 14 oz can unsweetened coconut milk, shaken (or whisked to fully combine)
    • Juice of 2 large or 4 small limes (about 1/3 cup)
    • 1 Tablespoon olive oil
    • 1 Tablespoon dried cilantro
    • 1 teaspoon garlic powder
    • 1 teaspoon kosher salt
    • 1/2 teaspoon crushed red pepper flakes

    Peanut sauce

    • 1/4 cup peanut butter
    • 1 Tablespoon + 1 teaspoon sesame oil
    • 1/4 cup light soy sauce
    • Juice of 2 large or 4 small limes (about 1/3 cup)
    • 1 1/4 teaspoons garlic powder
    • 3/4 Tablespoon Sriracha
    • 1 Tablespoon + 1 teaspoon honey
    • 1/2 teaspoon kosher salt

    Lettuce wraps and toppings

    • 1 head butter lettuce
    • 1 cup shredded carrots
    • 1 bunch fresh cilantro, chopped
    • 1 Tablespoon sesame seeds
    • 1 bunch of fresh bean sprouts
    • 1 cup Asian cucumber salad (below)

    Asian Cucumber Salad:

    • 3 1/2 cups cucumbers, peeled, seeds scooped out and sliced thin
    • 1 cup red onion sliced thin
    • 3/4 teaspoon kosher salt
    • 1 teaspoon crushed red pepper flakes,
    • 1 teaspoon sesame oil
    • 1/4 cup rice vinegar
    • 2 teaspoons granulated sugar
    • Sesame seeds, for garnish


    Cucumber Salad

    Place the cucumbers and onions in a large bowl and season them with salt and crushed red pepper. In a separate bowl, whisk together the oil, vinegar, and sugar until the mixture is smooth. Pour the dressing over the cucumber salad, tossing to coat evenly. You can serve the salad right away or refrigerate it for up to 3 days.

    Chicken

    Combine all of the marinade ingredients in a bowl (except the chicken) and mix well. Add chicken and turn to coat, ensuring the chicken is thoroughly covered. Let the chicken marinate for at least 30 minutes to absorb the flavors. Grill the chicken until its internal temperature reaches 165°F. Cover and allow it to rest for a few minutes before serving.

    Peanut Sauce

    While chicken is marinading, whisk all the peanut sauce ingredients until well combined. Set aside.

    Lettuce Wrap Assembly:

    Place chicken pieces onto lettuce wraps, then top with cucumber salad, shredded carrots, bean sprouts and fresh cilantro. Drizzle with peanut sauce and sprinkle with sesame seeds, then serve immediately and enjoy!
