    Blueberry Muffins Deliciously Homemade Recipe

    Blueberry muffins are one of the best little cakes and can be made all year long with frozen or fresh berries. These are delicious with any hot or cold beverage and made from scratch. The taste is fabulous sweet quick and simple to find ingredients and a special treat for the family.

    Shopping List:

    • 1 1/2 cups AP flour
    • 3/4 cup granulated sugar
    • 2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 1/3 cup vegetable oil
    • 1 large egg
    • 1/3 cup milk
    • 1 1/2 teaspoons vanilla extract (or if using zest add lemon extract or orange juice)
    • 8 ounces blueberries
    • Optional: 1 teaspoon cinnamon added to the batter 1 teaspoon orange or lemon zest

    Directions:

    1. Preheat the oven to 400 degrees and grease 12 cup muffins.
    2. Place the dry ingredients in one bowl and in a separate bowl all the wet ingredients.
    3. Whisk the wet ingredients together then fold them into the dry ingredients.
    4. Fold in the blueberries.
    5. Fill the muffin tins and bake at 400 degrees for 15 to 18 minutes or until the center of the muffins looks dry and not shiny.
    6. Muffins should be stored in a cool dry place in sealed containers.
