I like to put a pat of butter on a warm muffin and enjoy with a cup of coffee. And, I'll have this as a snack, too. It's not just for breakfast.

    Try this recipe.

    Ingredients

    Dry ingredients:
    • 1 1/2 cups all-purpose flour
    • 1/2 cup unsweetened cocoa powder
    • 1 cup granulated sugar
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1/4 teaspoon salt

    Wet ingredients:
    • 1/2 cup unsalted butter, melted
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1 cup buttermilk (or regular milk with 1 tablespoon lemon juice or vinegar)
    • 1 cup semi-sweet chocolate chips (plus extra for topping)

    Directions

    • Preheat the oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups.
    • Mix dry ingredients: In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
    • Mix wet ingredients: In another bowl, combine the melted butter, eggs, vanilla extract, and buttermilk. Whisk until well blended.
    • Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients. Gently mix until just combined; be careful not to overmix. Fold in the chocolate chips.
    • Fill the muffin cups: Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle a few extra chocolate chips on top of each muffin if desired.
    • Bake: Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
    • Cool: Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

    What do you think?

This is a good recipe to dress up in many ways, based on your tastes. Feel free to throw in walnuts, coconut, dried or fresh fruit or anything else you want, into the muffin batter to make it a truly unique muffin just for you.

    Enjoy this one!
