    Bacon Sweet Potato Biscuits with Hot Honey Butter

    We love sweet potatoes! They are packed with nutrients and health benefits and are dang tasty. There are so many recipes to incorporate this tasty tuber, and this one of them. Here is what you'll need for about 16 bacon sweet potato biscuits:

    For the Biscuits

    • 1 medium orange-fleshed sweet potato, peeled
    • 1 1/2 cups all-purpose flour
    • 1 tablespoon granulated sugar
    • 1 tablespoon baking powder
    • 3/4 teaspoon Kosher salt
    • 1/4 teaspoon ground cloves
    • 4 tablespoons (1/2 stick) cold unsalted butter, cut into 1/2-inch piece
    • 1/3 cup buttermilk
    • 1/2 cup cooked, crumbled bacon

    For the Hot Pepper Honey Butter

    • 4 tablespoons (1/2 stick) unsalted butter, softened
    • 1/4 cup honey
    • 1 1/2 teaspoons hot pepper sauce or more to taste

    Wrap the sweet potato in a damp paper towel and microwave on high for 5 to 7 minutes, or until very soft. Transfer to a bowl and mash well. Measure out 3/4 cup of the mashed sweet potato and set it aside to cool.

    In a food processor, combine the flour, sugar, baking powder, salt, and allspice. Pulse briefly to mix. Add the butter and pulse until it resembles pea-sized crumbs. Add the mashed sweet potato and buttermilk, then pulse just until the dough starts to come together.

    Transfer the dough to a well-floured surface, sprinkle crumbled bacon on top, and gently knead a few times until the bacon is evenly incorporated. Pat the dough out to about 3/4-inch thickness and use a floured 1 3/4-inch biscuit cutter to cut out 16 biscuits, gathering and re-patting the scraps as necessary.

    If baking in a conventional oven, preheat it to 400°F. Arrange half of the biscuits in the cooking pot or all of them on a parchment-lined baking sheet. Bake for 14-16 minutes, or until they turn lightly golden.

    While the biscuits bake, prepare the hot pepper honey butter by mixing the butter, honey, and hot sauce in a medium bowl. Adjust the hot sauce to taste. Serve the biscuits warm with the hot pepper honey butter and enjoy!!
