    Scallion Chicken Stir-Fry: Quick and Tasty Recipe From Home

    Ingredients

    For the Chicken:

      • 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
      • 2 tablespoons soy sauce
      • 1 tablespoon rice wine or dry sherry
      • 1 teaspoon cornstarch
      • 1 tablespoon vegetable oil

    For the Sauce:

      • 3 tablespoons soy sauce
      • 1 tablespoon oyster sauce (optional)
      • 1 tablespoon hoisin sauce
      • 1 teaspoon sesame oil
      • 1 tablespoon sugar
      • 2 teaspoons cornstarch mixed with 2 tablespoons water (slurry)

    For the Stir-Fry:

      • 4-5 scallions, chopped (white and green parts separated)
      • 2 cloves garlic, minced
      • 1 teaspoon ginger, minced
      • 1 bell pepper, sliced (optional)
      • 1/2 cup chicken broth or water
      • Cooked rice or noodles, for serving

    Directions

    • Marinate the Chicken: In a bowl, combine the chicken pieces with 2 tablespoons of soy sauce, rice wine, and 1 teaspoon of cornstarch. Mix well and let it marinate for about 15-20 minutes.
    • Prepare the Sauce: In a small bowl, whisk together 3 tablespoons of soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, and the cornstarch slurry. Set aside.
    • Cook the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
    • Stir-Fry the Vegetables: In the same skillet, add the chopped white parts of the scallions, garlic, and ginger. Sauté for about 1-2 minutes until fragrant. If using bell pepper, add it now and cook for another 2-3 minutes.
    • Combine Everything: Return the chicken to the skillet and pour in the chicken broth and prepared sauce. Stir to combine and cook for another 2-3 minutes, allowing the sauce to thicken slightly.
    • Finish and Serve: Add the green parts of the scallions and stir to combine. Serve hot over cooked rice or noodles.
