    Ingredients

    For the Strawberry Cupcakes:

    • 1 1/2 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1/2 cup milk
    • 1 cup fresh strawberries, pureed

    For the Strawberry Frosting:

    • 1/2 cup unsalted butter, softened
    • 4 cups powdered sugar
    • 1/4 cup strawberry puree (from fresh strawberries)
    • 1 teaspoon vanilla extract
    • A pinch of salt

    Directions

    • Preheat the Oven: Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
    • Make the Cupcake Batter: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a large bowl, beat the softened butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and strawberry puree.
    • Combine Dry and Wet Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined. Do not overmix.
    • Fill the Cupcake Liners: Divide the batter evenly among the cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
    • Prepare the Frosting: In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing on low speed until combined. Add the strawberry puree, vanilla extract, and a pinch of salt, then beat until smooth and fluffy. If the frosting is too thick, add a little more strawberry puree or milk to reach your desired consistency.
    • Frost the Cupcakes: Once the cupcakes are completely cool, use a piping bag or a knife to frost each cupcake with the strawberry frosting.
    • Serve: Decorate with fresh strawberries or sprinkles if desired. Enjoy your delicious strawberry cupcakes!
