    Cinnamon Toast Brioche Muffins

    Super delicious breakfast alert! These brioche muffins are so easy to make and delicious too. It's a great twist on the classic French Toast breakfast. This is all you need for 18-24 muffins:

    Ingredients:

    French Toast Muffins

    • 1 loaf of brioche bread
    • 8 large eggs
    • 1 1/2 cups milk
    • 2 tsp cinnamon
    • 1 tbsp vanilla extract
    • 1/4 cup granulated sugar

    Brown Sugar Cinnamon Topping

    • 4 tbsp unsalted butter, melted
    • 2 tbsp light brown sugar
    • 1 tbsp granulated sugar
    • 1 tsp cinnamon
    • 1/8 tsp salt

    For Serving

    • Maple syrup


    Start by cutting the brioche loaf into cubes and placing them on a wire rack set over a cookie sheet. Bake the cubes at 300°F for 8 minutes on each side, or alternatively, leave them out overnight to dry.

    In a large bowl, whisk together the eggs, milk, sugar, vanilla, and cinnamon until smooth and well-blended. Add the dried bread cubes to the mixture and gently fold them in until coated. Cover and refrigerate for at least 2 hours, or leave overnight to let the custard fully absorb into the bread.

    When ready to bake, preheat the oven to 375°F and grease a 12-cup muffin tin with non-stick spray. Fill each muffin cup with the soaked bread mixture.

    To make the topping, stir together the melted butter, brown sugar, cinnamon, sugar, and a pinch of salt in a small bowl. Evenly spoon the topping over each muffin cup. Bake for 20-25 minutes or until the muffins reach your preferred level of crispiness.

    Remove from the oven and let the muffins cool on a wire rack for 10 minutes before taking them out of the pan. If making more, repeat these steps for the next batch. Top with maple syrup and enjoy!
