This semester, all of the menu items are a combined “international barbeque.”Carrie’s is a student-managed restaurant of the School of Hospitality and Agricultural Leadership located on the top floor of Pummill Hall. Students enrolled in Restaurant Management (HSP 435) design the menu, prepare and serve the food and market the restaurant.Each semester, the restaurant presents a new menu and does not repeat menu items from the previous semester. “The very first day of class each semester, the students are given some examples and options for different types of food choices including fusion, which is a combination of two or more cultures,” said Wajeana White, Senior Instructor of HSP 435.From there, a theme for the menu is decided. On the second day of class for the semester, the students are expected to have three possible recipes that relate to the menu for appetizers, sandwiches, entrees, salads or desserts.“Each student presents their recipes to their peers, and then they vote on what they would like to test,” said White. “We cook and taste test each of the chosen recipes and then choose the best ones to go on the menu.”The menu offers a mix of Hawaiian, Korean, Thai, Mexican, Italian, and American barbeque items. Each plate is crafted to be creative and offer something new to guests. “We have an amazing menu, and each item has a unique flavor profile,” said White. “I personally love the Thai Crunch Salad because with the homemade Thai Peanut Dressing, it’s so vibrant with flavor.”Composing the cuisine, the students are learning more than measurements and recipes. The hospitality students are cooking and baking most menu items from scratch. “Nearly all of our menu items are homemade including the pizza crust and focaccia bread that we serve the Banh Mi on,” said White. One of the desserts offered on the Carrie’s Cafe menu is a Limoncello Tiramisu. White said that it is the “most time-consuming" item on the menu because of its many steps and layers.There are seven categories on the international menu: sandwiches, salads, starters, entrees, sides, desserts, and beverages. Each category contains at least two menu items, offering many vegetarian options. Carrie’s Cafe is open every Tuesday and Thursday 11:30 a.m. to 1 p.m., excluding Thanksgiving break and finals week, until Dec. 3.
