    Vietvana Pho Noodle House owners expanding at Ponce City Market with three new food stalls

    Three new food stalls from Dinh Tran and Khanh Dang will join their Vietnamese food stall, Vietvana Pho Noodle House , next spring at Ponce City Market’s central food hall.

    Through Boom Boom Bao, build-your-own bento box stall, Lime Tiger, and Uwu Asian Dessert Co., the couple plans to showcase a variety of dishes from several regions and countries on the Asian continent.

    Open for breakfast and lunch, expect bao and dumplings, along with other Chinese-style dim sum on the menu.

    Lime Tiger

    This build-your-own bento box stall will serve street foods from countries like Cambodia, Indonesia, Laos, Malaysia, and Thailand. Bento meals will come with a choice of rice, noodles, or egg rolls, a protein such as barbecue pork or sugarcane shrimp, and accompanying sauce.

    Uwu Asian Dessert Co.

    Uwu (“oh-woo”) will serve desserts and drinks inspired by those found in Japan and Korea, including egg waffles, bingsu (Korean shaved ice), mochi ice cream, boba, and milk teas.

    Tran and Dang first opened Vietvana five years ago in Avondale Estates, followed by locations in Midtown, Ponce City Market, and the food hall at Lee and White in West End. Vietvana serves pho and other dishes inspired by those of Tran and Dang’s hometowns of Hue and Saigon in Vietnam. Many dishes are based on family recipes, and Tran’s mother often assists in the kitchen.

    The couple briefly re-concepted the Midtown location on Spring Street into a Vietnamese coffee shop in 2022 . It closed a year later.

    Tran and Dang aren’t the only restaurateurs expanding at Ponce City Market. Later this fall, Chef Hector Santiago will open La Metro in the former Biltong Bar space in the food hall. Here, Santiago will serve Spanish-style tapas, including cured and tinned seafood, snacks such as patatas bravas, and tiny sandwiches called montaditos. Look for entrees, too, like lamb and olives and paella.

    La Metro joins Santiago’s Latin American restaurant and sandwich shop El Super Pan at Ponce City Market.
