I run a knife thru ground meat when I buy it in what looks like 1lb portions. Rewrap in the original package (shrink wrap included). When I want to cook with it, a long string blade knife or clever with some down pressure and wiggle will separate 1lb chunks as required. This makes it unnecessary to thaw the entire package.
