    Moist, Decadent Crumb Coffee Cake: Lazy Breakfast Idea

    Nothing beats a quality crumb coffee cake. And don't eat this with anything but coffee. This is one of my favorite foods to make.

    Ingredients

    For the Cake:

    • 2 cups all-purpose flour
    • 1 tablespoon baking powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1 cup sour cream (or plain yogurt)

    For the Crumb Topping:

    • 1 cup all-purpose flour
    • 1 cup packed brown sugar
    • 1 teaspoon ground cinnamon
    • 1/2 cup unsalted butter, melted

    Directions

    • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
    • Make the Crumb Topping: In a medium bowl, combine the flour, brown sugar, and cinnamon. Add the melted butter and mix until crumbly. Set aside.
    • Prepare the Cake Batter: In a large bowl, whisk together the flour, baking powder, baking soda, and salt. In another bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
    • Combine Ingredients: Add the dry ingredients to the wet mixture, alternating with the sour cream. Start and end with the flour mixture, mixing until just combined.
    • Layer the Cake: Pour half of the batter into the prepared pan and spread it evenly. Sprinkle half of the crumb topping over the batter. Add the remaining batter and then top with the remaining crumb topping.
    • Bake: Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
    • Cool and Serve: Allow the cake to cool in the pan for about 10-15 minutes before slicing. Serve warm or at room temperature, optionally with a dusting of powdered sugar.
