    Ingredients

    For the Salmon:

    • 4 salmon fillets (about 6 oz each)
    • Salt and pepper, to taste
    • 2 tablespoons olive oil
    • 1 tablespoon lemon juice

    For the Creamy Sauce:

    • 1 cup heavy cream
    • ¼ cup sun-dried tomatoes, chopped (oil-packed or rehydrated)
    • 2 cloves garlic, minced
    • ½ teaspoon dried oregano
    • ½ teaspoon dried basil
    • ½ teaspoon red pepper flakes (optional)
    • ½ cup grated Parmesan cheese
    • Fresh parsley, chopped (for garnish)
    • Lemon wedges (for serving)

    Directions

    Step 1: Prepare the Salmon

    1. Preheat the Oven: Preheat your oven to 400°F (200°C).
    2. Season the Salmon: Pat the salmon fillets dry and season with salt and pepper. Drizzle with olive oil and lemon juice.

Step 2: Make the Creamy Sauce

    1. Combine Ingredients: In a medium bowl, whisk together the heavy cream, sun-dried tomatoes, garlic, oregano, basil, red pepper flakes, and Parmesan cheese.
    2. Taste and Adjust: Taste the sauce and adjust the seasoning if needed.

    Step 3: Bake the Salmon

    1. Arrange in Baking Dish: Place the salmon fillets in a greased baking dish. Pour the creamy sauce evenly over the fillets.
    2. Bake: Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

    Step 4: Serve

    1. Garnish: Remove from the oven and garnish with fresh parsley.
    2. Enjoy: Serve with lemon wedges and your choice of sides, such as rice, quinoa, or steamed vegetables.

    Tips

    • For added flavor, you can marinate the salmon in olive oil, lemon juice, and herbs for 30 minutes before baking.
    • Feel free to add sautéed spinach or asparagus on top of the salmon before baking for extra veggies!

    What do you think?

When you get a chance, this is definitely a must-try recipe.
