    For the Steak and Potatoes:

    • 1 lb baby potatoes, halved
    • 2 tablespoons olive oil
    • Salt and pepper, to taste
    • 1 lb sirloin or ribeye steak, cut into bite-sized pieces
    • 2 tablespoons butter
    • 4 cloves garlic, minced
    • 1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)
    • 1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)
    • ½ teaspoon red pepper flakes (optional)

    For Garnish:

    • Fresh parsley, chopped
    • Lemon wedges (optional)

    Directions

    Step 1: Cook the Potatoes

    1. Boil Potatoes: In a medium pot, bring salted water to a boil. Add the baby potatoes and cook for about 10-12 minutes until fork-tender. Drain and set aside. Cook whole or cut into wedges.
    2. Sear Potatoes: In a large skillet, heat olive oil over medium-high heat. Add the boiled potatoes, season with salt and pepper, and cook until golden and crispy, about 5-7 minutes. Remove from the skillet and set aside.

    Step 2: Cook the Steak

    1. Sear the Steak: In the same skillet, add the steak pieces. Season with salt and pepper. Cook for about 3-4 minutes, stirring occasionally, until browned and cooked to your desired doneness. Remove from the skillet and set aside.

    Step 3: Make the Garlic Butter Sauce

    1. Add Butter and Garlic: In the same skillet, reduce the heat to medium. Add the butter, minced garlic, rosemary, thyme, and red pepper flakes (if using). Sauté for 1-2 minutes until the garlic is fragrant.
    2. Combine: Return the potatoes and steak to the skillet, tossing everything to coat in the garlic butter sauce. Cook for an additional 1-2 minutes to heat through.

    Step 4: Serve

    1. Garnish: Sprinkle with fresh parsley and serve with lemon wedges, if desired.
    2. Enjoy: Serve warm and enjoy this hearty, flavorful dish!

    Tips

    • For a bit of extra flavor, marinate the steak in olive oil, garlic, and herbs for 30 minutes before cooking.
    • You can add vegetables like bell peppers or green beans for more color and nutrition.
