    Ingredients

    For the Steak:

    • 2 ribeye or sirloin steaks (about 1 inch thick)
    • Salt and pepper, to taste
    • 2 tablespoons olive oil
    • 2 tablespoons unsalted butter
    • 3-4 cloves garlic, crushed
    • Fresh herbs (such as rosemary, thyme, or parsley), chopped

    For Serving:

    • Fresh herbs for garnish (optional)
    • Lemon wedges (optional)

    Directions

    Step 1: Prepare the Steak

    1. Bring to Room Temperature: Remove the steaks from the refrigerator about 30 minutes before cooking to bring them to room temperature. This helps them cook evenly.
    2. Preheat the Oven: Preheat your oven to 400°F (200°C).
    3. Season the Steaks: Pat the steaks dry with paper towels. Season both sides generously with salt and pepper.

    Step 2: Sear the Steak

    1. Heat the Skillet: In a large oven-safe skillet (cast iron works great), heat olive oil over medium-high heat.
    2. Sear the Steaks: Once the oil is hot, add the steaks to the skillet. Sear for about 2-3 minutes on each side until a nice crust forms.

    Step 3: Add Herbs and Butter

    1. Add Garlic and Herbs: After searing, add the crushed garlic and chopped herbs to the skillet.
    2. Add Butter: Add the butter to the skillet and spoon it over the steaks for added flavor.

    Step 4: Roast in the Oven

    1. Transfer to Oven: Place the skillet in the preheated oven and roast the steaks for 5-8 minutes, depending on your desired level of doneness (use a meat thermometer: 130°F for medium-rare, 145°F for medium).
    2. Baste: If desired, baste the steaks with the melted herb butter halfway through cooking.

    Step 5: Rest and Serve

    1. Rest the Steaks: Once cooked to your liking, remove the skillet from the oven and transfer the steaks to a cutting board. Let them rest for 5-10 minutes to retain their juices.
    2. Garnish and Serve: Slice the steak against the grain, garnish with fresh herbs, and serve with lemon wedges if desired.
