    Crepes are so underrated. They are an airy, light thin pancake you can stuff with fresh fruit, nuts, chocolate, whipped cream and other toppings. You fold in the filling, fold closed the crepe and have a delicious breakfast to enjoy.

    Ingredients

    • 1 cup all-purpose flour
    • 2 large eggs
    • 1 ½ cups milk
    • 2 tablespoons melted butter (plus extra for cooking)
    • 1 tablespoon sugar (optional, for sweet crepes)
    • ½ teaspoon vanilla extract (optional, for sweet crepes)
    • Pinch of salt

    Directions

    Step 1: Make the Batter

    1. Combine Ingredients: In a mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar (if using), vanilla extract (if using), and salt until smooth. You can also use a blender for a quick and easy mix.
    2. Rest the Batter: Let the batter rest for at least 30 minutes at room temperature. This helps create a smoother texture.

    Step 2: Cook the Crepes

    1. Heat the Pan: Heat a non-stick skillet or crepe pan over medium heat. Lightly grease with melted butter.
    2. Pour the Batter: Pour about ¼ cup of batter into the center of the pan. Quickly tilt and swirl the pan to spread the batter evenly into a thin layer.
    3. Cook: Cook for about 1-2 minutes until the edges start to lift and the bottom is lightly golden.
    4. Flip: Carefully flip the crepe using a spatula or by gently lifting it with your fingers. Cook for another 30 seconds to 1 minute until golden.
    5. Transfer: Remove the crepe from the pan and place it on a plate. Repeat with the remaining batter, greasing the pan as needed.

    Step 3: Serve

    • Fill and Enjoy: Fill the crepes with your favorite sweet or savory fillings. Popular options include:
      • Sweet: Nutella, fresh fruit, whipped cream, or a sprinkle of powdered sugar.
      • Savory: Spinach and cheese, ham and eggs, or sautéed mushrooms.
