    Hearty Whole Wheat Pancakes and Fresh Berries: Rustic Fall Breakfast

    Whole wheat pancakes are so underrated and incredibly delicious. They taste earthy, they have a hint of sweetness and when you pair them with dark sweet berries like blackberries, raspberries or dark cherries, this recipe can't miss!

    Ingredients

    • 1 cup whole wheat flour
    • 2 tablespoons sugar (optional)
    • 2 teaspoons baking powder
    • ½ teaspoon baking soda
    • ½ teaspoon salt
    • 1 cup buttermilk (or regular milk with 1 tablespoon vinegar added)
    • 1 large egg
    • 2 tablespoons melted butter (plus extra for cooking)
    • 1 teaspoon vanilla extract (optional)

    Directions

    Step 1: Mix Dry Ingredients

    1. Combine Dry Ingredients: In a large bowl, whisk together the whole wheat flour, sugar, baking powder, baking soda, and salt until well combined.

    Step 2: Mix Wet Ingredients

    1. Combine Wet Ingredients: In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.

    Step 3: Combine Mixtures

    1. Mix Together: Pour the wet ingredients into the dry ingredients. Stir gently until just combined; it’s okay if there are a few lumps. Do not overmix.

    Step 4: Cook the Pancakes

    1. Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter.
    2. Pour the Batter: Pour about ¼ cup of batter onto the skillet for each pancake.
    3. Cook: Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for another 1-2 minutes until golden brown.

    Step 5: Serve

    1. Enjoy: Serve warm with your favorite toppings, such as maple syrup, fresh fruit, or yogurt.
