    Mexican eatery, The Guac Box, opening in Warrensburg

    WARRENSBURG, N.Y. ( NEWS10 ) — The Guac Box , a modern American taqueria, is set to open in Warrensburg. The eatery is opening at 3915 Main Street in the former Sulla Terra Bistro and Bakery space, which closed in December.

    The Guac Box is owned by Adam Geiser, along with his wife Kaley Geiser and father Darren Geiser. Geiser said he will be heading the kitchen with his father and his wife will be managing the front of house operations.

    “Mexican was an easy choice as I have been head over heels in love with Mexican cuisine and flavors since I was just a child,” Geiser told NEWS10. “Having been raised in Florida kitchens, Mexican food was really just, well food, as it was common place.”

    Geiser has 14 years of restaurant experience with his father having all most 40 years. Both have opened and ran several restaurants in the Adirondacks and out of area over the years. Geiser said he previously worked at Frederick’s Restaurant in Bolton Landing, as well as opened and ran Cantina 32 in Bolton Landing for two seasons.

    “We have always personally loved Warrensburg,” said Geiser. “We find it to be the hidden gem of the Adirondacks and a place we frequented often. We actually dined at our current establishment last season and said how perfect it would be for us. Lo and behold, six months later we see the listing and the rest was history.”

    The Guac Box menu features a variety of tacos with beef, chicken, birria, pork al pastor, carne asada, and fish, as well as quesadillas, enchiladas, birria ramen, and chips with guac and queso. The menu includes “The Guac Box,” which has chips, loaded queso, guacamole, and salsas to feed four people.

    Geiser said The Guac Box will not be serving any alcohol, but there is a brewery across the street. “We are family owned and operated meaning we will also be a fully family and pet friendly establishment with very little extra space,” said Geiser. “This lead to the decision of no alcohol on premises.”

    The taqueria will be fast-casual, meaning the food will be ordered at the counter and served in a takeout fashion. There will be indoor seating but they will not initially be offering table service, said Geiser. They do plan to add delivery and outside dining at some point.

    Geiser is hoping to open The Guac Box on Thursday, April 11. The restaurant is set to be open from 11:30 a.m. to 8 p.m. Thursday through Monday, closed Tuesdays and Wednesdays.
