As long as a vendor can pass a SURPRISE health inspection of their unit and have a vendors license, I say go for it.

Food poisoning is the biggest problem and cooked foods kept below temperature along with raw foods not kept up to refrigeration temperatures. Cleanliness is another concern along with personal hygiene and etc.
