    A Deliciously Pineapple Upside Down Sugar Cookies-Perfect Treat For Holidays

    Pineapple upside down sugar cookies are the perfect holiday treat and after that tasty pineapple and cherry are gone, you still have a soft, fluffy sugar cookie! These are easy to pick up and eat, but can leave you slightly sticking from all of that buttery brown sugar glaze.

    Ingredients:

    • 1 ½ cups all-purpose flour
    • ½ teaspoon baking soda
    • ¼ teaspoon salt
    • ½ cup unsalted butter, softened
    • ¾ cup granulated sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 6 pineapple rings, patted dry and halved
    • ¼ cup brown sugar
    • Maraschino cherries, halved (optional)

    Directions:

    1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
    2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside
    3. .In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
    4. Beat in the egg and vanilla extract until well combined.
    5. Gradually add the flour mixture to the wet ingredients mixing until just combined.
    6. Sprinkle a small amount of brown sugar onto each cookie spot on the baking sheet.
    7. Place half a pineapple ring on each brown sugar spot, pressing down slightly.
    8. Using a spoon, scoop dough and place it on top of each pineapple ring, spreading slightly to cover the fruit.
    9. Press a maraschino cherry half into the center of each cookie, if desired.
    10. Bake for 12-14 minutes, or until the cookies are golden around the edges.
    11. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
