6 large eggs
8 small flour tortillas
1 cup shredded cheddar cheese (or Mexican blend)

1/2 cup chopped bell peppers
1/4 cup chopped onions
1 cup enchilada sauce
Salt and pepper to taste
1 tbsp butter or oil for cooking
Instructions:
Preheat your oven to 350°F (175°C).
In a medium skillet, heat the butter or oil over medium heat. Add the onions and bell peppers, cooking until they are softened.
In a separate bowl, beat the eggs and season with salt and pepper. Pour the eggs into the skillet with the vegetables and scramble until just cooked through.
If you’re adding bacon or sausage, stir it into the egg mixture.
Spoon the scrambled eggs into the center of each tortilla and sprinkle a bit of cheese over the top. Roll the tortillas tightly and place them seam-side down in a greased baking dish.
