    There are many variations for patty recipes. Each region has their own. My family uses Traditional Southern - which has no mayonnaise. It can have crushed crackers instead of bread crumbs. I use Panko. These preferences have meaning only to the person cooking. All is good and enjoyed your own way!!! I live in the Pacific NW with fresh Salmon everywhere. I ask what is the difference between a Crab Cake and Crab? The same as Salmon patties! Personal taste!
