This recipe is especially close to my heart because it reminds me of the summers I spent in Georgia, picking fresh blueberries with family. The mix of tart blueberries and the smooth creaminess of Greek yogurt brings back all those sweet Southern memories in every bite. I stumbled upon this gem from Insanely Good Recipes, and I just had to share it with y’all.

If you love easy homemade desserts that taste like they’ve come straight from the heart of Georgia’s blueberry fields, this is the recipe for you.

A Little History of Blueberries in Georgia

Did you know that Georgia is one of the top blueberry-producing states in the U.S.? That’s right—while peaches are the state’s iconic fruit, Georgia’s soil is perfect for growing plump, juicy blueberries. This cake brings that local flavor to life, blending fresh berries with the richness of yogurt and the brightness of lemon zest. The result? A perfectly balanced cake that’s soft, sweet, and packed with natural goodness.

Whether you're living in the Peach State or just want to bring a taste of the South into your kitchen, this blueberry yogurt cake is a delicious way to savor the flavors of Georgia.

How to Make Blueberry Yogurt Cake with Lemon Glaze

    Ingredients:

    • 1 3/4 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/2 cup unsalted butter, room temperature
    • 1 cup granulated sugar
    • 2 large eggs
    • 2 teaspoons lemon zest (from about 2 lemons)
    • 1/2 teaspoon vanilla extract
    • 1 cup plain Greek yogurt
    • 1 1/2 cups fresh blueberries

    Optional Lemon Glaze:

    • 1 cup powdered sugar
    • 2-3 tablespoons fresh lemon juice

    Instructions:

    1. Preheat the Oven: Set your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper, leaving an overhang on the sides to help lift the cake out after baking.
    2. Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
    3. Cream the Butter and Sugar: In a large bowl, beat the butter and sugar with an electric mixer on high speed until light and fluffy, about 4 minutes.
    4. Incorporate Wet Ingredients: Turn the mixer to low and add the eggs one at a time, followed by the lemon zest and vanilla extract. Mix until smooth.
    5. Combine Wet and Dry Mixtures: Alternately add the dry ingredients and the Greek yogurt to the butter mixture, beginning and ending with the flour mixture. Gently mix by hand until just combined.
    6. Add Blueberries: Toss the blueberries with the last portion of flour mixture, then gently fold them into the batter, ensuring no streaks of flour remain.
    7. Bake: Pour the batter into the prepared pan and bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
    8. Make the Lemon Glaze: Whisk together the powdered sugar and lemon juice until smooth and drizzle it over the cooled cake. Allow the glaze to set for about 15 minutes before slicing and serving.

Pro Tip: For a smoother batter and fluffier texture, make sure your butter and eggs are at room temperature before mixing. It also helps to switch from using a mixer to a spatula when incorporating the dry ingredients to avoid overmixing.

    Make It Your Own

Want to give this cake a fun twist? Here are a few ways you can customize it to suit your taste:

    • Gluten-Free Version: Substitute the all-purpose flour with a gluten-free flour blend.
    • Extra Lemon Zing: Add more lemon zest to the batter or even some lemon extract for an extra punch of citrus.
    • Berry Mix: Feel free to mix in raspberries, blackberries, or even strawberries for a more diverse berry flavor.

    Perfect Pairings

Serve this blueberry yogurt cake with a side of whipped cream or vanilla ice cream for an extra indulgent treat. It also pairs wonderfully with a hot cup of coffee or a cold glass of iced tea on a warm Georgia afternoon.
